Rose Sugar Cookies

Looking for a special treat to perhaps bring to a holiday party or to give as a gift? Well, look no further  than this recipe for Rose Sugar Cookies, a delightful sugar cookie that is flaky and has the perfect amount of sweetness.  Each cookie is either garnished with an edible rose bud or with rose flecks in each.  Wrap in a giftable box and presto, you have a pretty gift to bring to your holiday hostess.

ROSE SUGAR COOKIES

1 cup softened unsalted butter or coconut oil (at room temperature)

3/4 cup sugar

1 teaspoon pure vanilla extract

1 egg

1 egg yolk 

3 cups flour

1/2 teaspoon salt

1/2 teaspoon baking powder

Turbinado sugar, for sprinkling

Directions: Combine butter/coconut to a bowl fitted for a mixer.   Add sugar and beat until light and fluffy, about 3 to 4 minutes.  Add vanilla, egg, egg yolk and beat until combined.  Add flour 1/2 cup of a time, salt and baking powder.  Mix until incorporated.*  Place dough into plastic wrap and chill for at least one hour.  When ready to bake, preheat oven to 350 degrees.  Line a baking sheet with parchment paper.  Let dough come to room temperature.  Flour a working surface and roll out dough so that it is 1 inch thick.  Cut out dough into circles (we love this set), or desired shape. Place onto parchment, sprikle with turbinado sugar and bake for 5 to 6 minutes until just set. Add rose buds by gently placing them into the center. Bake for 1 one more.  Let cool slightly in pan then move to a cooling rack.

*There are two methods to this cookie. One is to place full rose bud into cookie, which will primarily serve as a decoration.  Another option is to crumble 1/2 cup of rose buds into batter after all ingredients are incorpated.  This will result in rose-flecked dough.  If doing this method, bake for 7 minutes until just set.  

Makes 16 cookies (depending on size of cookie cutter)
