ROSE & IVY Oatmeal with Kiwi, Chia Seeds and Bee Pollen

Beginning your day on a healthy note is one thing that is a non-negotiable.  It is kind of like making the bed, one small act can set a chain reaction for other positive things.  Oatmeal is the ultimate comfort food, plus it is a great base that can be transformed with additions of other bits of goodness.  Here, I upped the ante with nutritious chia seeds and bee pollen.  To read about the benefits of these ingredients, click here.  

Oatmeal with Kiwi, Chia Seeds & Bee Pollen

1/2 cup old-fashioned oats

1 1/4 cup water (or milk if preferred)

2 tablespoons chia seeds

1/2 tablespoon coconut oil

1/2 tablespoon honey (add more if you prefer sweeter oatmeal)

1/4 tablespoon ground cinnamon

1/2 teaspoon bee pollen

2 tablespoons slivered almonds (or another nut)

1 kiwi diced, or any type of fruit

Place oatmeal, chia seeds and water in a medium sauce pan over medium heat allow to come to a simmer. Add honey after mixture begins to thicken and cinnamon.  Stir in coconut oil mixing until melted. Remove from heat.  Place in bowl and add bee pollen, almonds and fruit.
