What has been your go to summer drink? Mine has been this simple recipe for Watermelon and Ginger juice, which has served as a temporary replacement from my Turmeric Elixir. The watermelon at the farmers market right now is insanely sweet and filled with so much watery goodness, which has proven to be quite a treat on hot summer days. Because the water content is so high, it is a great option for a juice in the Vitamix. I combine it with fresh ginger (I talk about that here) and mint from the 'garden', pulse a few times and presto, you have juice! I have been drinking this daily, for me it is summer in a sip.
WATERMELON & GINGER JUICE
1 1/2 cups cubed watermelon, chilled
2 springs fresh mint
2 inches fresh ginger root*
Directions: Place watermelon, mint and ginger in a blender. Cover half way with water. Pulse until smooth.
*Start with 2 inches of ginger, but if you like it spicier add more. I typically add 4 inches of this inflammation fighter.
