One of the great parts about winter is the variety of citrus that is available from blood oranges to pomelos, so much colorful goodness. Pomelos are just pretty - their chartreuse exterior and bright pink interior make them irresistible. Here is a simple recipe that incorporates this variety of fruit.
Pink Pomelo Spritzer
1 large pink pomelo, juiced
1 cup water
½ cup sugar
Chilled sparkling water, to taste
Place 1 cup of water and sugar in a heavy-bottomed saucepot over low heat. Allow sugar to dissolve. Let chill in the refrigerator.Divide pomelo juice into two glasses. Add desired amount of simply syrup and seltzer.
