Mother's Day is synonymous to me with serving a delicious brunch. I love looking for ways to reinvent classic dishes, like the pancake, a brunch staple. Here, I opted to make a cornmeal pancake and fill it with plump blueberries and drizzle with my favorite maple syrup from Noble.
