The spring issue of ROSE & IVY Journal is in progress (it will launch in May) and our apartment is filled with flowers, which makes me insanely happy. If you follow me on Instagram you might have noticed this! Sadly I only need one or two flowers for a feature so I am left with a lot of left overs, I know an awful predicament! Since flowers are my favorite subject to photograph, I figure combine them into as many shots as possible - enter this delicious recipe for Flourless Chocolate Oatmeal Cookie made pretty by beautifully fragrant jasmine. I have a flourless cake that I make, but until these cookies I hadn't experimented with flourless cookies. These treats have a cake-like center and are delightfully rich, thanks to the dark chocolate folded into the batter. Finished with sea salt, Maldon to be exact, these are great cookies for the gluten-intolerant or just a cookie lover looking to try something different.
