ROSE & IVY Journal Salted Coconut Truffles

Truffles are one of those holiday sweets that are incredibly versatile, not to mention delicious!  They are my person go to for the season - roll them in coconut, toasted hazelnuts, puffed rice, the options are limitless.  If you were able to peruse The Holiday Edition of ROSE & IVY, you probably stumbled across this recipe for Salted Coconut Truffles.  They are impossibly good and melt in your mouth.  For another bit of holiday baking inspiration try this recipe for Chewy Ginger Molasses Cookies.

8 ounces good quality 70% chocolate, roughly chopped

1 cup heavy cream

1 teaspoon pure vanilla extract

pinch of salt

2 cups all natural flaked coconut

sea salt flakes for garnish

Place chopped chocolate into a heat-proof bowl.  Bring one cup of heavy cream to a simmer on the stove taking care not to scald cream.  Pour over chocolate and let set for about 3 minutes.  Whisk to combine.  Add vanilla, salt and stir until mixture is smooth.  Refrigerate until completely cooled and chocolate becomes solid.  Place coconut on a plate.  Using a small cookie scoop, form small balls with chocolate and roll into coconut and garnish with sea salt flakes. Repeat until finished.  Serve chilled or at room temperature.
